Some people might be turned off to the peanut butter in this recipe but the chipotle peppers (smoked jalapenos) make it a great combination. The barbeque sauce can be used a variety of meat. However, I prefer the chipolte barbeque sauce on chicken. I guarantee you'll love it. If not, all sales are final.;)
Ingredients:
1 1/2 pounds of Chicken Breast cut into long thin strips. The even thickness of the strips the even the cooking. 1 package of skewers (soak in water for at least 30 minutes before cooking) Marinade: 3 cups of water ginger scallion 4 cloves of garlic 3 tbs. of chopped ginger
Prep: Mix in a blender. Pour into a zip lock bag with strips. Marinade for an hour in fridge. It's now time to make the barbeque sauce.
BBQ Sauce: 1/2 bottle Kraft Brown Sugar BBQ Sauce 1/2 cup smooth peanut butter 1/4 cup soy sauce 1 tbs. rice wine vinegar 1 tbs. finely chopped canned chipotle peppers in adobe sauce (can be found where Mexican products are sold) 2 tbs. honey 1 tsp. cayenne pepper Prep: Whisk the above ingredients until well mixed.
Final Prep: Preheat oven to 300 degrees. Put thin chicken strips on a skewer (1-2 strips should be enough to cover length of skewer). Put on a medium-low grill. Turn when medium grill marks are present on bottom. It won't take long. Brush top with BBQ sauce. Remove when medium grill marks have been made on the other side. Put into a pan and brush with remaining BBQ sauce. Cover with foil and bake for 7-10 minutes. This is also great with pork.
