I got this recipe off TV (Ming Tsai's East meets West on the Food Network). It's the best Garlic Mashed Potatoes recipe I have found. 6-8 large potatoes peeled and cut into medium chunks
Ingredients:
8-10 potatoes 1 cup cream 3 tbs. butter 4 cloves of roasted chopped garlic salt and pepper to taste
Prep: Boil potatoes for 40 minutes. Preheat oven to 400 degrees. Roast garlic in foil for 10 minutes. Combine garlic, cream and butter in a sauce pan. Bring to a boil and simmer until cream reduces a little. Drain potatoes and put into a single layer of a pan. Put into oven for 3-5 minutes. This will dry the potatoes. Combine potatoes with a little bit of cream at a time. Add cream until right consistency. If there is not enough cream, add a little of milk. Salt and pepper to taste. If you don't like garlic, don't use it. It still makes great mashed potatoes.
